Tina’s Old fashioned Truffles
Take any amount of stale cake, plain, fruit etc. and crumble
it up to breadcrumb texture. Heat a small amount of your favourite homemade jam
in a small saucepan, and add enough to the cake crumbs to bring it all together
but firm. Form into small balls and roll in desiccated coconut.
These will keep very well in the refrigerator if you can
control yourself that is.
Extra additions can include such things as:
Chopped nuts
Raisins
Golden Sultanas
Chocolate chips
Chopped Dried Fruits of your choice
Cocoa powder or melted chocolate
A little Brandy or whiskey added to the mix will add an
extra layer of flavour and also allow the truffles to be kept for a much longer
period of time – up to 1 year if refrigerated.
Note: The addition of any alcohol will render these truffles
an “adult” only treat as the alcohol will not be cooked off and will remain in
the truffles as it is.
