Country Style Bacon & Potato Soup a la Tina
On a cold winters day there is more comforting or warming to body and soul than a bowl of steaming hot soup. As the end of the pay period comes close many families don't have a lot left in the cupboards or the fridge and coming up with a meal is sometimes a difficult mission.
I made this soup today for lunch from just a few ingredients I had on hand. The bacon trimmings came from cleaning bacon for dehydrating a couple of days ago which was an experiment that I was conducting.
That is a whole new blog in itself for another day.
This recipe is easy to make, takes very few ingredients and tastes absolutely delicious.
500 g (roughly) of bacon trimmings, roughly chopped and
browned
3 medium onions, roughly chopped and browned in the same pan
as the bacon was
6 large potatoes, peeled and cubed
2 litres home canned beef stock or water
Freshly ground black pepper
Place all ingredients into a large pan. Bring to the boil
then cover and simmer for 1 hour. Check seasoning and add a little salt if
needed. Serve with buttered crusty rolls and enjoy!
Note: you can just use a ham hock if you have one on hand to replace the bacon trimmings.
