Kiwi Pikelets



Kiwi Pikelets
1 cup self-raising flour
¼ cup sugar
1 egg
¾ cup milk, approximately
Place flour into a mixing bowl and gradually stir in combined egg and milk, stirring or whisking until smooth. Heat a large frying pan on medium heat. Lightly grease pan evenly with butter or spray. Drop tablespoons of the pikelet batter into the frying pan. When bubbles start to appear on the top, turn pikelets. Cook other side until golden brown. Serve buttered with raspberry jam and fresh whipped cream.
