Ginger Vegetable Stir-Fry
Serves 4

Ingredients
1 medium sweet potato, peeled
2 large carrots, peeled
2 large zucchini
6cm piece fresh ginger, peeled
2 tbspn vegetable oil
2 cloves garlic, crushed
1 red chilli, chopped (optional)
1/2 tspn salt
1/2 tspn white pepper
2 tspn sugar
50g green beans, trimmed
2 baby bok choy, halved lengthwise
1 tbspn sherry
1 tbspn sesame seeds
dash of soy sauce


Method
Attach the coarse toothed blade of the Super mandoline, adjust the thickness to desired setting and tightly secure the screw.

Using the hand guard, slice the sweet potato, carrot, zucchini and ginger using a firm and swift downwards action.
Heat a large wok to hot. Add the oil, garlic and chilli and toss in the sliced vegetables. Stir fry for 1 minute. Add salt, pepper and sugar and toss well. Add the green beans, bok choy and sherry. Cover and steam for 30 seconds or until the vegetables are just tender.

Place onto a serving plate and sprinkle with sesame seeds and soy sauce. Serve immediately
