4 eggs
2 cups sugar
tsp salt -- 1/4
2 tsp vanilla or almond flavouring
2 tbsp butter
1 cup boiling hot milk
2 cups sifted all purpose or cake flour
2 tsp baking powder
In a large bowl beat the eggs until very light and increased in volume to 3 or 4 times the original amount. Beat in the sugar, salt and flavouring until perfectly blended. Then add the butter to the boiling hot milk until melted and beat them in. Sift together the sifted flour and baking powder and beat them in by hand until just blended. Have prepared greased and floured pans which may be 2 9-inch layer cake pans or one 13 x 9-inch oblong pan. At once pour batter into prepared pans and bake at 350' for 25 to 35 minutes or until cake tests done when lightly touched at centre with fingertip. The impression will immediately disappear if cake is done. Let stand in pans 5 minutes, then turn out on cake coolers to cool.
NOTE: You can increase this recipe by 1-1/2 times and bake it in a spring form tube pan.
