Corn Cakes
¼ cup corn, cooked
2 tablespoons chopped
onion
Salt and Pepper to taste
1 tablespoon chopped chives
½ cup Homemade Pancake Mix (recipe below)
Mix all the ingredients together with enough water to make
thick pancake batter. Cook on a low heat in little oil in a large frying pan.
Turn over as soon as small bubble pop on the surface and cook other side till
golden brown. Serve with your favourite
dipping sauce.
Homemade Pancake Mix
This mix makes enough for 4 batches of pancakes.
4 cups plain flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon plain cooking salt
3 tablespoons sugar
Whisk all the ingredients together in a large bowl and store
in an airtight container.
Instructions – To
make pancake batter, mix 1 cup batter mix with 1 egg and 1 cup of milk until
smooth. Allow to sit for 20 minutes before cooking.
Note: In hot
climates you are better to store this in the fridge or freezer to keep it
fresher and free from bugs.
