The Best Big Fat Chewy Chocolate Chip Biscuits In The World
These are my all time favourite chocolate chip biscuits.

2 cups flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup unsalted butter, melted
1 cup soft brown sugar
½ cup white sugar
1 teaspoon vanilla essence
1 egg
1 egg yolk
1 cup chocolate chips
Preheat the oven to 325F. Grease the cookie sheet or line
with baking paper. Cream butter and sugars. Beat in vanilla, egg and egg yolk
until light and fluffy. Mix in the dry ingredients until just blended and then
stir in the chocolate chips. Roll the dough into balls to what ever size you
wish and place on the cookie sheets. Flatten with a floured fork. Make sure the
cookies are spread well apart as they may spread a little through baking. Bake
for 15 to 17 minutes or until the edges are lightly coloured. Cool on the
cookie sheets for a few minutes before transferring to a cooling rack to cool
completely.
