Old-Fashioned Cornflake Macaroons

Another recipe from my mother’s recipe box. I realised while I was typing this, that it could easily be made gluten free.

Cornflake Macaroons
Serving Size  : 40   
  4 egg whites -- stiffly beaten
  ¾ cup  sugar
  3 cups  corn flakes -- crushed
  ½ teaspoon  vanilla
  1 cup  nut meats -- chopped
  1 cup  coconut
  few grains salt
Fold sugar and other ingredients into egg whites. Drop by spoonful’s onto greased tin. Bake in slow oven (300°F) from 10-12 minutes, or until delicately brown. Cool before removing from baking sheet.
