Bread and
Butter Pickles
This
recipe comes from a very dear, dear friend of mine. To me she is the canning
queen and she has taught me so much as I was learning to pressure can and
things. I hope that you all enjoy making these pickles as much as I do. These
are my all-time favourites. For a real twist try making them using Zucchini
instead of cucumbers sometime. They are simply to die for. Now to get to the
recipe:
Bread and Butter Pickles
Over 30 years ago when I first learned to can from other navy
wives I bought this little book called the Complete Book of Pickles and
Relishes by Leonard Louis Levinson. This
book has travelled with me and the pages are warn and dog eared from use

Bread and Butter Pickles
7 cucumbers sliced
5 onions sliced
1 green pepper chopped
1 red pepper chopped (if I don't have a red I use another green, the red looks nice)
1/4 cup salt and cracked ice
pickling solution
2 ½ cups white vinegar
2 ½ cups white sugar
1 tablespoon mustard seed
1 teaspoon celery seed
¾ teaspoon turmeric
¼ teaspoon powered cloves
Prepare vegetables place in a large bowl. Mix in the salt. Cover with ice. Let stand 3 hours. Prepare pickling solution. Add the drained veggies. Bring to a boil and remove from heat. Fill jars with veggies and top with the liquid.
Hot Water Bath 10 minutes.
Makes about 6 pints
